The starting line up for Gridiron Guacamole features ripe avocados along with the robust flavors of applewood smoked bacon bits, jalapeños or habanero chiles, garlic and red onions. With avocados in the line up you’re sure to be voted playoff party MVP.
6 large ripe avocados, peeled, seeded, cut in chunks
4 Tbsp. fresh lime juice
1 lb. applewood-smoked bacon, or regular variety bacon, cooked crisp, crumbled
1 medium red onion, finely chopped
1 medium yellow or red bell pepper, cored, seeded, diced
3 large cloves garlic, minced
1/2 cup fresh cilantro leaves, finely chopped
3 jalapeño or habanero chilies, stemmed, seeded if desired, finely chopped
Salt and freshly ground pepper, to taste
Coarsely mash avocado chunks in large bowl with lime juice. Add crumbled bacon, chopped red onion, bell pepper, garlic, cilantro and chilies; combine well. Taste and adjust seasoning with salt and freshly ground pepper. Sprinkle with chopped cilantro to serve.
Serve guacamole with thick-style tortilla chips.
Yield is approximately 12-16 servings.
