National Pork Board Introduces New Latin-Inspired Recipes to Celebrate the Season

From Thanksgiving Day to some of the more traditional Hispanic holiday celebrations such as Las Posadas, Las Parrandas, Christmas Day and the Three Kings’ Day festivities, the National Pork Board is ready to serve up delicious pork recipes that will make mouths water at upcoming holiday celebrations.

To add more dazzle to staple pork dishes, the National Pork Board has launched the second part of its multimedia series “Sabrosos Momentos con Chef Lorena Garcia” (Flavor-Filled Moments with Chef Lorena Garcia) on its Spanish-language website PorkTeInspira.com with four festive pork-inspired video recipes for the holidays.

“Food is something that unites us during the holidays, and as Latinos, pork dishes serve as the centerpiece to our family celebrations,” said Chef Garcia. “Making these traditional recipes during the holiday season is so special to us – it’s a reflection of who we are as a culture and a perfect time to bond with our loved ones.”

  • Pork Tamales: The “Tamales de Cerdo,” or Pork Tamales, is a traditional meal served during the holiday season. With this delicious dish, consumers can make a large batch for any family gathering during the season. Ingredients: pork loin roast, chili peppers, chicken broth, corn flour, baking powder, chili powder, butter, salt, dark brown sugar, cumin powder, red pepper powder, ground black pepper and canola oil.
  • Holiday Pork Loin: Nothing says Christmas like a traditional recipe that brings the family closer with a flavor-filled celebration of aromas, textures, ingredients and, of course, pork. Ingredients: pork loin roast, oranges, garlic, chipotle chilies, corn oil, salt, adobo powder and sour oranges.
  • Fresh Pork Leg Stuffed with Jalapeno and Chorizo: It’s one of the most simple and delicious recipes home cooks can prepare to celebrate the holidays with family and friends! Ingredients: fresh pork leg, jalapeno chilies, chorizo, garlic, onion, salt and black pepper.
  • Tostadas with Shredded Pork Meat, Cabbage Salad and Chipotle Cream: This is the perfect meal for any occasion. Ingredients: Shredded pork meat, lemons, canola oil, shredded cabbage, red onion, cilantro, chipotle peppers in adobo sauce, soft corn tortillas, tomatoes and salt.

Along with the recipe videos, the National Pork Board is releasing a series of educational videos with Chef Garcia showcasing several popular pork cuts that are great for cooking holiday dishes such as: fresh pork leg, pork loin roast, pork chop and pork blade steak.

Pork is versatile, flavorful and a main staple in Latin cuisine. However, Chef Garcia takes her prowess for cooking pork to another level by not only presenting new twists on old favorites, but also talking about the kinds of cuts that make for the most savory options and highlighting pork’s role in a healthy diet.

For best results, the National Pork Board recommends cooking pork to an internal temperature between 145°F and 160°F. The seven pork cuts classified as lean by the United States Department of Agriculture (USDA) are: pork tenderloin, sirloin pork chop, New York pork chop, Ground pork – 96% lean, New York pork roast, porterhouse chop and rib-eye pork chop.
