Grilled Salmon with Strawberry Ginger Salsa

This award-winning recipe serves up salmon with a sweet and savory fresh salsa.

Serves: 6

Ingredients

Salsa:
Prepare at least one hour ahead.
1 English or seedless cucumber, finely chopped
1 green onion, thinly sliced
1 tbsp. cilantro, cut into strips
3-4 tbsp. seasoned rice wine vinegar
2 cups fresh California strawberries, hulled and diced small
1 yellow pepper

Sauce:
1 stick unsalted butter
1 clove garlic
1 tbsp. honey
2 tbsp. soy sauce
1 tbsp. fresh lemon juice
6 Salmon fillets (or fish of your choice), skinless

Directions
Mix cucumbers, green onion, cilantro, yellow pepper and vinegar. Cover and chill at least one hour. Just before serving, add strawberries. In a small saucepan melt butter with garlic over low heat. Stir in honey, soy sauce and lemon juice and cook 2 minutes, set aside. Prepare a charcoal grill, when ready brush sauce on salmon pieces and place on a well-oiled fish grilling rack. Place rack over coals about 4 inches from fire and grill approximately 4 to 5 minutes on each side. Brush with the sauce again after turning, and again when done. Transfer to warm platter and top with salsa.

Seaborne Airlines to Launch Service between San Juan and Anguilla

SAN JUAN, Puerto Rico, Feb. 18, 2015 /PRNewswire-HISPANIC PR WIRE/ — Seaborne Airlines is pleased to announce the addition of non-stop service between San Juan Luis Muñoz Marín International Airport (SJU) to Clayton J. The NYC Administration for Children’s Services investigates more than 50,000 reports of suspected child abuse and neglect every year across New York City. The Child Advocacy Center model is a proven, effective approach to investigating and responding to allegations of severe child abuse and neglect, bringing together various disciplines necessary to the process and helping children heal. It ensures children’s safety, addresses their physical injuries and emotional trauma, and brings abusers to justice. In 2015, The Bronx CAC will see an estimated 2,000 of the most serious cases of child abuse in the borough. It will likely be one of the CACs with the highest volume in the country.

Republicans More Likely to Visit than Democrats


BOCA RATON, Fla., Feb. 17, 2015 /PRNewswire-HISPANIC PR WIRE/ — Hispanics earning the highest incomes were most likely to support lifting the U.S. embargo with Cuba and were most optimistic that it would lead to regime change, according to the latest survey conducted by the Florida Atlantic University Business and Economics Polling Initiative (FAU BEPI) in the College of Business.

Overall, Hispanics support lifting the embargo, with 43 percent in favor, 24 percent opposed and 33 percent undecided. Among those earning under $25,000, 24.1 percent opposed the embargo. Opposition to the embargo rises to 41.9 percent of those earning $25,000 to $75,000, while 67.8 percent earning more than $75,000 opposed it. Highest income earners also were most optimistic that lifting the embargo would lead to regime change (64.5 percent).

A majority of all Hispanics surveyed (73 percent) were in favor of re-establishing diplomatic relations with Cuba and in favor of unrestricted travel to Cuba (61 percent). Overall, expanding trade with Cuba was favored by 68 percent of respondents, including 87.1 percent of highest income earners ($75,000-plus). Republicans are most likely to visit Cuba (56.8 percent), while only 38.5 percent of Democrats said they are likely to visit. 

“A plausible explanation for the support of high income earners to lift the embargo could be the vision of investing in Cuba,” said Monica Escaleras, director of BEPI. “Young respondents as well as high-income earners might see lucrative opportunities, perhaps opening businesses in Cuba.”

The Cuba poll was part of a monthly survey by BEPI of consumer optimism among Hispanics, which rose to a new high of 100.69, up from 86.4 in December, the highest level since FAU started calculating the index in August 2014. The survey was conducted nationally from Jan. 1 through Jan. 31. The polling sample consisted of 500 Hispanics with a margin of error of +/- 4.33 percent and a 95 percent confidence level.

Filmed entirely in Guadalajara, Mexico, MEXICANICOS profiles the engineering and creative challenges Martin Vaca and his collaborators encounter in the process of renovating unique and surprising vehicles. All eight episodes of this docu-reality take place at “Vaca Limousines,” one of the country’s largest conversion workshops, which specializes in creating customized limousines, hearses and hot rods. As long as it has wheels and an engine, no vehicle is off limits for Martin and his team, whose creations include a Boeing 727 converted into a limousine, a giant limo shaped like a vintage ocean liner, and a car in the shape of a chili pepper to promote a local distillery.

Each episode of MEXICANICOS follows the work on each vehicle from beginning to end, from the initial conversation with the client through delivery of the surprising final product. Viewers will witness the renovation of the Mustang Mach 1 belonging to Jesus and Francisco Elizalde, the sons of singer Lalo “El Gallo” Elizalde, who travel to Guadalajara to restore their father’s old car; as well as the restoration of the ’57 Chevy owned by actor Edgar Vivar, known for his role as Senor Barriga on “El Chavo del Ocho.”

Martin Vaca’s workshop is famous throughout Mexico for the limousines and hearses it produces. The team has participated in numerous international events in Las Vegas and the prestigious LCT in New York, and U.S. Hispanic audiences will now have a chance to appreciate the creativity of its exclusive restorations.

According to race organizers, speed is not the goal of this race; it is to log the shortest amount of distance while navigating across the Sahara desert for nine straight days, searching for strategically placed flags. The women will hand over every electronic device they own at pre-race tech inspection and rely solely on navigating with a 1960s’ hand-drawn map, a compass, a minutes ruler and a plotter!
